About this place
The rich aroma rising as the bowl reaches the counter and the unmistakable presence of thick, hand-kneaded curly noodles set the stage. Located in Chitose, Sumida Ward, Teuchi Ren crafts a hearty bowl centered on artisanal, hand-cut flat-thick noodles. Combining firm structure, a springy chew, and an easy glide as you slurp, they hold tightly to the concentrated broth, releasing wheat sweetness with every bite.
The broth stands out for its layered depth, built by carefully simmering dashi from niboshi dried sardines, kelp, and other ingredients. Diners can select a mellow, richly rounded shoyu base or a shio broth that highlights delicate shellfish umami; both are satisfying down to the final drop. For the salt ramen, an optional side dish of butter adds a milky richness when melted midway through, offering an engaging shift in flavor.
The chashu takes center stage among the toppings, simmered until tender enough to pull apart with chopsticks, letting natural pork flavor emerge without greasy heaviness. For more meat, the Chashu-men is a natural fit, while the Zenbunose Ramen adds shrimp wontons and a seasoned egg for complete balance across all components. A few drops of the counter's kelp vinegar into your soup spoon bring a clean, refreshing finish that keeps the bowl interesting to the end.
Seating is limited to a calm counter layout, making it easy to concentrate on your meal even when dining solo. Payment is cash only, and reservations are not accepted, so allowing extra time is recommended when planning a visit.
